Coconut Macadamia Nut Cookies

Coconut, macadamia nuts, are blended to make an exquisite coconut macadamia nut cookie in this recipe. The cookies stay really moist do to the coconut and macadamia nuts. Some other ingredients add to the delicious taste of these cookies.
Ingredients -
 
1 teaspoons Soda
2 tablespoons hot water
1 cup Shortening
1 3/4 cup Sugar
3 Eggs, beaten
1 cup Coconut, shredded
1 cup Macadamia Nuts, chopped
2 1/2 cup Flour
2 cup Dates, chopped
1 teaspoons Vanilla
 
Preparation:
 

Mix soda in hot water; set aside. Cream shortening and sugar; add eggs. Mix well.

Add soda mixture and remaining ingredients.

Form into balls and bake on cookie sheet at 375°F for 12 minutes. or until a light golden brown. you do not want to over bake these as it will tend to dry out this very moist cookie
