Italian Seafood Soup

Nothing is so good for you and yet taste so good. Our Italian seafood soup is reminiscent of a perfect Italian minestrone soup with the added feature of fresh seafood like shrimp and scallops added to give this Italian classic a new twist.
Ingredients -
 
½ lbs. Bay Scallops
½ lbs. Peeled And Deveined Medium Shrimp
1 15 oz. Can Navy Beans, Drained and Rinsed
5 Medium Roma Tomatoes, Coarsely Chopped
4 oz. Broken Dry Linguini or Fettuccine
1 Cup Fresh Spinach
2 14 oz. Cans Low-Sodium Chicken Broth
2 Leeks, Halved Lengthwise and Sliced Into ½ Inch Thick Pieces
2 Cups Water
1 tbs Extra Virgin Olive Oil
2 tbs Minced Garlic
1 tsp. Dried Thyme
Fresh Ground Black Pepper to Taste
 
Preparation:
 

In a large skillet add the extra virgin olive oil and bring to a medium heat. To this add the garlic and cook for half a minute. Now add to this the leeks stirring till tender remove from heat and place in your crockpot or slow cooker.

Put the broth in a 4 cup glass measuring cup and place in the microwave for 4 minutes on high to pre-heat the broth. When done remove from microwave and add the broth to the crockpot. Repeat this procedure for the water cooking in microwave for 3 minutes on high setting. Remove and add to slow cooker.

Next add the navy beans, and thyme. Add the shrimp, scallops, and tomatoes to the mixture.

Brake the linguini or fettuccini in half and add this to your Italian seafood soup let this cook on the high setting till the noodles are tender but still firm.

Ladle into individual soup dishes and add the fresh spinach to you seafood soup and pepper to taste. May also be sprinkled with a little Italian Romano or Parmesan cheese.

Serves 4 people

Serve with garlic breadsticks with melted butter spread onto and sprinkled with granulated garlic. A nice Italian salad goes well with this or a fresh garden salad with your favorite greens and veggies.
