Tomato Florentine

This recipe brings visions of an old world Tomato Florentine soup recipe tomatoes and herbs complement the fresh spinach nicely and give this soup a light and refreshing taste. Great on a spring day when you want to eat light in the Florentine tradition.
Ingredients -
 
1 medium Onion, diced
2 cloves Garlic, minced
1 tablespoon Olive Oil
2 (1 lb.) cans Tomatoes
2 (1 lb.) cans Tomato Sauce
2 teaspoons Oregano
2 teaspoons Basil
2 teaspoons Thyme
1 Bay Leaf
1 bunch Fresh Spinach, washed & chopped
Salt & Fresh Ground Pepper to taste
 
Preparation:
 

Saute the onion and garlic in large kettle in the olive oil. Add the tomatoes, tomato sauce and spices. Simmer about 30 minutes. Remove bay leaf. Add spinach.

Makes about 6 (2 cup) servings
